Executive Sous Chef – Luxury Resort, Bora Bora

About the role

Four Seasons Bora Bora is looking for an Executive Sous Chef to support the Executive Chef in managing the resort's culinary operations, including the restaurant kitchens, pastry, staff canteen and stewarding. The post is based on the private island resort in French Polynesia, on a permanent full-time basis, available in April 2027.

Key responsibilities

• Support the Executive Chef in daily culinary management and supervise the kitchens, pastry, canteen and stewarding
• Help develop menus, concepts and promotional offers while ensuring quality, presentation and freshness standards
• Prepare and follow the department budget, controlling food costs, payroll and operational spending
• Analyse menu performance, ingredient costs, dish popularity and consumption trends to improve profitability
• Ensure HACCP compliance and adherence to Four Seasons standards
• Take part in recruiting, integrating, training and developing kitchen staff
• Work closely with the Restaurant Director and F&B teams to deliver an exceptional guest experience
• Support sustainability initiatives such as reducing food waste, optimising resources, sorting waste and using local products

Required profile

• At least two years of experience in a similar position in a luxury establishment
• Solid experience managing several outlets, production kitchens and high-volume operations
• Strong leadership, team management and talent development skills
• Proven ability to meet targets on customer satisfaction, food quality, productivity, cost control and staff engagement
• Cultural sensitivity and adaptability
• French mastery and good English required; a work permit is needed for non-nationals and a residence card for non-Europeans
